Recipe Description

This is the standard burrito shop hot sauce. If you make it with some love it is a must have that will last in the fridge forever.

Ingredients

QuaUnitIngredient 
1 tb olive oil
1/2 ea white onion, peeled and cubed
3 cloves garlic
4 ea ancho chiles, seeded and torn up
6 ea roma tomatoes, cored and seeded
2 cups water
1 ts kosher salt
1/4 ts black pepper
1 tb dried mexican oregano
1 ts adobo paste
1/2 cup chopped cilantro

Method & Notes

  1. brown the garlic, onion, and chile in the oil until the onion is soft and the chile aromatic.
  2. add the adobo, tomato, salt and pepper. cook for 5 minutes on med heat.
  3. Add water and simmer for 30 minutes until it starts to thicken up.
  4. Blend, then season with the oregano, cilantro, and more salt if necessary.
