Recipe Description

I adapted this technique from a friend who made grilled chicken this way.

Ingredients

2 pounds pork ribs
1 stick salted butter
2 tb adobo paste
1/4 cup smoked chile dry rubView Recipe
1 ea lime

Method & Notes

  1. Rub the ribs generously with the dry rub
  2. Allow to rest at room temp for 30-60 minutes
  3. Heat your smoked to 450 degrees
  4. Roast the meat until it is sizzling
  5. Melt the butter with the adobo and mix
  6. Baste your ribs with the butter while the meat is cooking up to 165 degrees
  7. Squeeze the lime over the meat

Note that in the recipe I smoke at very high temp. I like the roasted smoky flavor this gives the meat.

The ribs are done when the meat starts to pull away from the bones (the tips of the bones will start to stick out.
