Recipe Description

This is a very simple recipe that is pungent but does not overwhelm the shrimp's flavor.

Ingredients

2 pounds Jumbo shrimp
1 head garlic, peeled and minced
2 tb olive oil
1 tb cracked black pepper
1 tb Mexican oregano
1 ea chili guajillo, sliced

Method & Notes

  1. Split the shrimp down the center, leaving the shell on.
  2. Marinate the shrimp in all of the ingredients except the butter and lime for at least an hour.
  3. Heat the butter until its spitting in a cast iron pan.
  4. Sear the shrimp.
  5. Squeeze the limes over the shrimp and serve immediately.
