Recipe Description

These cheese stuffed poblano chiles are often served as an appetizer. You can add any number of ingredients to the filling, such as shrimp or smoked chicken.

Ingredients

3 cups monterey jack or queso oaxaca, grated
3 ea eggs
1/2 cup all purpose flour

Method & Notes

  1. Very carefully prepare the chiles according to the recipe. Do your best to keep them whole.
  2. Make a slit down the side of each chile.
  3. Fill each chile with 1/2 cup of the cheese.
  4. Separate the eggs.
  5. Beat the whites to stiff peaks.
  6. Beat in the yolks one at a time.
  7. Roll the chiles in the flour, then dip in the egg to coat completely.
  8. Heat 1/2 inch of oil in a heavy pan.
  9. Fry the chiles until lightly browned.
