I was planning on making some clam chowder the other day and realized that we were out of a few key ingredients. After scrambling around the kitchen for a bit they ended up in the oven.

Ingredients

5 pounds cherrystone clams
1/4 cup sliced scallions
1/4 cup minced red bell peppers
1/4 cup minced celery
1/2 cup corn kernels
2 cloves garlic
1/4 cup butterView Recipe
1/2 ea lemon, juiced
1 dash Tabasco
1/2 ts Good Old Bay
1 cup panko breadcrumbs

Method & Notes

  1. Steam the clams until they just open. Then set them aside to cool for a bit.
  2. Sweat the vegetables in 1 tablespoon of the butter until they are tender.
  3. Add the corn and the rest of the butter, then cook for a couple more minutes.
  4. Add all the rest of the ingredients and season to taste.
  5. Remove the top shell from the clams, and scoop up as much of the stuffing as you can fit. Pack it down a little bit to help it hold its place.
  6. Bake at 425 until they are golden.
