Demiglace is a heavily reduced veal stock.

Ingredients

2 cups red wine
1/2 pound beef scraps
2 each chopped shallots
2 cloves garlic
1 sprig thyme
2 each black peppercorns

Method & Notes

  1. Brown the shallots, garlic, and beef scraps in the butter.
  2. Deglaze with the red wine and reduce until almost dry.
  3. Add all the rest of the ingredients.
  4. Bring to a simmer and reduce by 4 times.
  5. Strain and reduce to 1 cup.
