Recipe Description

Fish fumet is a concentrated, aromatic stock made from white fish bones and vegetables, simmered in water and white wine. I prefer to make this stock with cod, haddock, or sole bones.

Ingredients

3 pounds white fish bones
2 tb oil
1/4 cup chopped onions
1/4 cup chopped leeks
1/4 cup chopped carrots
1/4 cup chopped celery
1 sprig thyme
1 each bay leaf
1 clove garlic
2 each black peppercorns
1 quart ice water
1 cup dry white wine

Method & Notes

  1. Sweat the bones and vegetables in the oil.
  2. Add the spices, herbs, water, and white wine.
  3. Bring to a simmer and simmer for 30-45 minutes, skimming often.
  4. Strain, cool, and reserve.
