Recipe Description

Fresh flour tortillas are available throughout the southwest. If you don't happen to live there these are pretty easy to make.

Ingredients

2 cups all purpose flour
1 ts kosher salt
1/4 cup lard
3/4 cup tepid water

Method & Notes

  1. Mix the flour and the salt in your mixer.
  2. Add the lard in chunks, then process until just mixed.
  3. Add the water, mixing constantly.
  4. Add a little more flour as necessary until the dough just balls up on the mixers paddle.
  5. Cover the dough with a damp towel and allow to rest for 15 minutes.
  6. Cut the dough into 10 pieces, then roll these into balls. Allow to rest covered for another 45 minutes.
  7. Toss the balls in flour, then roll out until very thin.
  8. Cook the tortillas in a dry cast iron pan, flipping back and forth until they are dry and just starting to get a few brown specs.
