Recipe Description

This is the classic gratinee version of onion soup.

Ingredients

1 pound onions, sliced
1 ounce butterView Recipe
1 quart chicken stockView Recipe
1 ounce brandy
1 ea bay leaf
1 sprig thyme
4 each crostiniView Recipe
4 ounces grated gruyere cheese

Method & Notes

  1. Saute the onions in the butter until they are deep golden brown. Some chefs add a pinch of sugar to speed the process, but you don't have to if you take your time.
  2. Deglaze with the brandy, then reduce until almost dry.
  3. Add the stock and herbs. Simmer for 20-30 minutes.
  4. Season to taste.
  5. Put the soup into oven proof serving bowls.
  6. Top each with a crostini and cheese.
  7. Brown in a 450 degree oven (or broiler).
