Recipe Description

This has come a long ways from the standard spaghetti and meatballs. A little pork is a standard trick for making meatballs juicy and flavorful. I take this a step further and use spicy Italian sausage.

You will notice that the sauce is very basic. The key here is the sauce will get all of its flavor from the meatballs.

Ingredients

3 cups crushed tomatoes
1 tb tomato paste
1 tb olive oil
1/4 ts smoked paprika
1 ts oregano
1 ea bay leaf

1 ts minced garlic

Method & Notes

  1. Roll out your pasta, and cut into fettuccine.
  2. Brown the meatballs.
  3. Add the tomatoes, paprika, and bay leaf.
  4. Cook, stirring very carefully for about 1/2 hour.
  5. Set the meatballs / sauce off to the side.
  6. Cook the pasta.
  7. Toss the hot pasta with the butter, olive oil, minced garlic, and kosher salt / black pepper to taste.

I think one of the most important keys of making pasta is making sure the pasta tastes good on its own. Bland pasta will rob the flavor from your sauce.
