Recipe Description

Frijoles de olla (beans in a pot) is a staple in every Mexican home.

Ingredients

2 cups dried beans (black or pinto)
10 cups water
1/2 ea onion
1 clove garlic
1/3 cup lard
1 pinch dried sage
1 ea bay leaf
1 ea dried New Mexico red chile
1 tb kosher salt
4 ea serrano chiles

Method & Notes

  1. Spread the beans out on a baking tray to ensure there are no stones. Cover with water and soak for 4 hours. Discard any beans that float and drain.
  2. Place beans in a dutch oven with the 10 cups water, onion, garlic, dried chile, and lard. Cook covered over medium heat for 1 1/2 to 2 hours (until beans are tender). Add more hot water as necessary to keep beans covered.
  3. Add all of the rest of the ingredients and cook uncovered for another half hour.

Question: "Is that two cups water ("to cover") and ten for cooking, or four cups of water to soak (which seems like the amount needed for them to plump up and remain covered), and the remaining six (plus more, if needed) for cooking, or...? Can these be "refried"? They sound DELICIOUS!"
