Recipe Description

Comfort food is often defined as food that brings you back to memories of your childhood. Pork chops and applesauce was always a favorite in my home. This recipe takes this natural flavor combination and makes it a little more elegant.

Ingredients

3 pounds pork loin
8 slices applewood smoked bacon
1 ea granny smith apple
1 ts minced fresh thyme
1 cup caramelized shallot and bourbon glaceView Recipe

Method & Notes

  1. Season the pork loin with salt and pepper. Sear the loin in a large saute pan until it is lightly browned on all sides.
  2. Core the apple and slice about 1/4 thick.
  3. Split the loin in half and spread the apples evenly over the inside. Sprinkle with the thyme.
  4. Put the loin back together, and wrap tightly with the bacon.
  5. Roast at 375 degrees until the bacon is crispy and the loin is cooked to 150 degrees. I use a simple instant read meat thermometer for this.
  6. Slice into medallions.
