1 1/2 pounds Idaho potatoes
1/2 cup heavy cream

Method & Notes

  1. Peel the potatoes and cut into even 1 1/2" cubes. This is the most important key. You need to cut potatoes evenly so they cook evenly.
  2. Cover the potatoes with salted water and bring to a boil.
  3. Cook until just tender.
  4. Put the cream and butter in a small sauce pan and let reduce by 1/3.
  5. Strain the potatoes and put in your mixer with the whisk attachment.
  6. Add the cream mixture in with the potatoes.
  7. Mix slowly to just incorporate the cream.
  8. Season with salt and pepper.
  9. Whip on med-high speed for 30 seconds.
