New England Salt Cod Cakes

Recipe Description

Salt Cod cakes were a staple of traditional New England food. They still make an excellent breakfast or appetizer.

Ingredients

2 cups mashed potatoesView Recipe
1/4 pound salt codView Recipe
1 cup milk
1 cup ground saltines
1 ts minced dill
1 ts whole grain mustard

Method & Notes

  1. Rinse the excess salt from the cod.
  2. Soak the cod in the milk for at least 4 hours.
  3. Bring the fish to a simmer in the milk and cook for about 15 minutes, or until it flakes easily.
  4. Strain the cod and reserve 1/4 cup of the milk.
  5. Break the cod up into fine flakes.
  6. Mix all ingredients except the saltines.
  7. Add enough cracker crumbs so you can form the cakes. They should be fairly moist.
  8. Divide and form into 2" cakes.
  9. Roll these cakes in the remaining cracker crumbs and fry in butter until golden brown and crispy.
