Recipe Description

Halibut is a firm white fish that is easy to overcook. This recipe seals in the moisture and natural flavor with apple wood smoked bacon.

Ingredients

2 pounds halibut fillets
12 slices apple wood smoked bacon
1 ts minced thyme
1 ts cracked black pepper
1 cup tomato thyme salsaView Recipe

Method & Notes

  1. Cut the fillets into medallions. Put the medallions together so you have 12 equal ones.
  2. Wrap the medallions in 2 slices of bacon each. Try to wrap around the sides (similar to bacon wrapped scallops). I usually trim the ends so they are flat. This helps with the searing.
  3. Roll the outside of these medallions in the thyme and cracked pepper.
  4. Sear the medallions on one side, then flip over. Finish in a 450 degree oven until the bacon is crispy and the fish with flake lightly.
  5. Top each medallion with a rounded tablespoon of the salsa.
