Ingredients

1 quart sour cream

Method & Notes

  1. Remove the skin and fat from the chicken, then simmer in the stock until cooked.
  2. Remove the chicken from the stock, and boil until it has reduced to 1 cup.
  3. Peel and seed the roasted chiles.
  4. Blend the chiles with the sour cream, adding the chicken stock and salt to taste.
  5. Add the chicken and green cream sauce to a heavy bottomed pan and bring to a simmer.
  6. Reduce heat to low and cook for about 15 minutes.
