Recipe Description

The flavorful pork butt is the best cut for this recipe, but in a pinch you can use any roast. Adobo is a very strong spice rub that is common in the taquerias of Mexico.

Ingredients

4 pounds pork butt roast
1/4 cup adobo
1 each white onion
4 cloves garlic
2 pounds red potatoes
1 tb Mexican oregano
2 ea sage leaves

Method & Notes

  1. Wash and dry the pork roast
  2. Rub heavily with the adobo, really working it into the meat.
  3. Allow the meat to marinate for 12-24 hours.
  4. Season the meat with kosher salt.
  5. Brown the roast in a heavy cast iron dutch oven.
  6. Turn the roast fat side up and cover.
  7. Put the dutch oven in the oven at 275 degrees.
  8. Roast until the pork is 130 degrees, basting every 30 minutes.
  9. Quarter the onions and potatoes, and toss with the garlic and herbs.
  10. Add all ingredients to the dutch oven...try to work the potatoes down the sides into the juice.
  11. Continue to cook until the pork is cooked (160+ degrees) and the potatoes are falling apart.
