These croquettes were developed for a brunch.

Ingredients

4 ounces mexican chorizoView Recipe
2 cups peeled and grated potatoes
2 cloves minced garlic
1/2 cup diced onions
1 tb minced fresh sage
1 ts chili powder
1 pinch cumin
1 cup breadcrumbs
2 tb sour cream

Method & Notes

  1. Brown the chorizo
  2. Add the onions and garlic and cook till soft
  3. Add the potatoes, sage, and chili powder and cook
  4. Allow to cool
  5. Season to taste with salt and pepper
  6. Add the sage and spices, then mix
  7. Form into 16 patties
  8. Roll the patties in the breadcrumbs, then fry till golden.
  9. Serve the croquettes with a dollop of the sour cream (you may need more, to taste)
