Ingredients

1/4 cup white wine
1/4 cup diced onions
1 clove garlic, minced
1 tb olive oil
1 sprig fresh oregano
1 pinch fennel seed

Method & Notes

  1. Sweat the onions, garlic, fennel seed and oregano in the olive oil.
  2. Add the peppers and cook for one more minute.
  3. Add stock and wine, then bring to a simmer.
  4. Puree and season to taste.
