I roast my chicken mole in a dutch oven to preserve the natural flavors.

Ingredients

1 ea 3-4 pound roasting chicken
1 tb oil
2 cups chicken stockView Recipe
1/4 cup mole paste
8 ea flour tortillasView Recipe

Method & Notes

  1. Season the chicken inside and out with salt and pepper.
  2. Bring the stock to a boil and mix in the mole sauce.
  3. Brown the chicken on all sides in the dutch oven (in the oil).
  4. Pour the mole sauce over the chicken, cover and put the oven at 325 degrees.
  5. Cook until the chicken is at 165 degrees internally, basting every 15 minutes.
  6. Quarter the cooked chicken and arrange on your serving platter. Pour the mole sauce over the top and server with warm tortillas.
