Recipe Description

I like to make roasted garlic puree in bulk, then freeze packages of it individually. This is the method we use in commercial kitchens to make large quantities.

Ingredients

QuaUnitIngredient 
2 cups peeled garlic cloves
1/4 cup chicken stockView Recipe
1 tb olive oil

Method & Notes

  1. Toss the garlic in the olive oil.
  2. Place in a small baking pan and add the stock.
  3. Cover with foil and bake at 325 degrees until the garlic is very soft (and slightly caramelized).
  4. Puree in your food processor.
