this sauce is the base to menudo rojo, pozole rojo, and many other things.

Ingredients

20 ea dry chile california
1/2 ts cumin seeds
1/2 ts coriander seeds
2 clove unpeeled garlic
1 ea 1" thick slice of white onion
1 tb olive oil

Method & Notes

  1. split, seed, wash and dry the chiles
  2. heat the oil in a pan
  3. brown all the ingredients
  4. pour just enough water to cover
  5. bring to a boil
  6. remove from heat and allow to sit for 30 minutes
  7. blend and (optionally) strain. i strain this when it will be used as a soup base.
