Sherry wine vinegar has a perfect balance of acidity, flavor, and sweetness.

Ingredients

1/2 cup sherry wine vinegar
1/2 cup x-virgin olive oil
1 cup vegetable oil
1 tb Dijon mustard
1 tb lemon juice
1 tb minced shallots
1 ts honey

Method & Notes

  1. Mix the vinegar, mustard, lemon juice, shallots, and honey in a medium bowl.
  2. Allow to steep for 15 minutes
  3. Whisk in the vegetable oil, then the olive oil.
  4. Season to taste with salt and pepper

About semi-emulsified dressings

This dressing will separate as it sits. For me this is a fine trade off for the fresh flavor that not overworking the dressing imparts.
