Shrimp ceviche is an almost instant appetizer.

Ingredients

QuaUnitIngredient 
1/2 pound cooked small shrimp
2 tb minced onion
2 tb diced tomatoes
2 tb diced cucumbers (seeded)
1 tb chopped cilantro
1 ts minced serrano chile
2 tb clam juice
1 tb ketchup
1 tb fresh squeezed lime juice

Method & Notes

  1. Mix all ingredients
  2. Season to taste with salt, lime juice, and something spicy.
  3. Allow to rest in the refrigerator for at least 1 hour.
