I had a banner day tuna fishing the other day, with a total of about 70 pounds of prime tuna loins. This recipe is a little sweeter than my normal salty and hot smoke style; this works balances the pungent smoke and accents the sweet flavor of fresh albies.

Ingredients

1 qt water
1/3 cup kosher salt
1 cup brown sugar
1 ea lime
6 ea chile de arbol
4 ea bay leaves
4 ea garlic cloves, rough chopped
10 lb fresh albacore loin

Method & Notes

Brine the tuna

  1. mix all ingredients except the tuna until the sugar and salt is dissolved.
  2. cut the tuna into 1" thick steaks.
  3. soak the tuna in the brine overnight in the refrigerator.

Prepare the smoker

  1. Chop mesquite into small chunks and soak in warm water.
  2. Start a fire in your smoker box with mesquite charcoal.
  3. Once the charcoal is going good and your smoker has reached 175 arrange the tuna on the grill and put the mesquite chunks on the fire.
  4. Shut down the smoker and smoke for an hour and a half at 175 degrees.
