Mackerel come into the New England waters just as the summer is starting to get into swing. They are great fun to fish for because they will bite almost anything (including a shiny hook).

Smoking is a great way to balance the pungent flavor of this fish.

Ingredients

4 pounds mackerel fillets, skin on
2 tb cracked black pepper
1 tb kosher salt

Method & Notes

  1. start a fire in your smoker and bring up to 150 degrees
  2. soak applewood chips in hot water for 15 minutes
  3. lay the mackerel on a sheet pan skin side down
  4. season with the black pepper and salt
  5. smother your fire with the chips
  6. arrange the fish on the grate evenly
  7. close down your smoker and smoke at around 150 degrees for 1 hour
