Sushi rice takes practice to get perfect. Our sushi chef told me that when you get it perfect the rice in the center of the steamer will stand on end.

Ingredients

3 cups high quality sushi rice
3 1/2 cups ice water
1 ts vegetable oil
1/3 cup seasoned rice wine vinegar

Method & Notes

Wash your rice

It is critical that your rice is washed well before you start.

  1. Put your rice in a colander, then put the colander in a large mixing bowl.
  2. Put your rice under your faucet and fill the bowl with ice water. Gently stir the rice with your hand as it is filling.
  3. Dump out the water and repeat 3 times.

Cooking your rice

Put your rice and water into the rice cooker. Add the oil and stir. Cook. Note that the oil makes the rice stay separated.

Cooling the rice

Once your rice is cooked put it in a large bowl (or ideally an oke tub) and gently fold in the vinegar. Add more or less to taste. Continue mixing until the rice stops steaming. Cover with a damp towel.
