Sushi rice takes practice to get perfect. Our sushi chef told me that when you get it perfect the rice in the center of the steamer will stand on end.
It is critical that your rice is washed well before you start.
Put your rice and water into the rice cooker. Add the oil and stir. Cook. Note that the oil makes the rice stay separated.
Once your rice is cooked put it in a large bowl (or ideally an oke tub) and gently fold in the vinegar. Add more or less to taste. Continue mixing until the rice stops steaming. Cover with a damp towel.
