Recipe Description

This is a version of a recipe that I used to make with Quail.

Ingredients

4 each Natural chicken breasts, skin on
1 cup finely chopped walnuts
1/4 cup flour
1/4 cup egg washView Recipe
1 tb minced rosemary
1 each bay leaf
1 cup red seedless grapes
1 tb olive oil
1/2 cup Cabernet
1/2 cup demiglaceView Recipe
1 tb butterView Recipe

Method & Notes

  1. Toss the grapes in the oil, and roast until lightly caramelized and breaking apart.
  2. Deglaze the pan with the wine, reduce by 1/2, and add the demiglace. Reserve.
  3. Season the chicken breasts with salt, pepper, and the rosemary.
  4. Roll the breasts in the flour, then dip in the egg, and crust the skin side with the walnuts.
  5. Lightly brown the chicken on both sides, and finish in the oven.
  6. Bring the sauce to a boil and whisk in the butter. Season with salt and pepper. The sauce should be fairly thin, but very flavorful.
