Recipe Description

In the summer in Maine wild berries hide throughout the scrub brush and fields. Blackberries, strawberries, and blueberries are my favorites in for this recipe.

Ingredients

QuaUnitIngredient 
4 cups mixed wild berries
1/4 cup white sugar
1 slice lemon zest
1 tb corn starch
1 tb red wine
1/4 cup cranberry juice

Method & Notes

  1. Mix the corn starch with the red wine.
  2. Mix the juice, lemon zest, and sugar. Bring this to a boil and whisk in the corn starch slurry.
  3. Return this to a boil, stirring constantly. Cook until it gets shiny.
  4. Mix in the berries, and remove from the heat.
  5. This is ready to use as soon as it is cool.
